Ingredients
  

  • 1 whole rotisserie chicken shredded
  • 1 tablespoon olive oil or preferred cooking oil
  • 1 cup chicken broth or vegetable broth for a lighter option
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
  • 2 medium tomatoes diced
  • Salt and pepper to taste
  • Optional: herbs and spices e.g., cumin, paprika, chili flakes
  • Optional: shredded cheese or sour cream for topping

Instructions
 

  • Prepare the Ingredients
  • Shred the rotisserie chicken using your hands or a fork. Set aside.
  • Dice the onion, garlic, bell pepper, and tomatoes.
  • Sauté the Vegetables
  • Heat 1 tablespoon of olive oil in a large skillet or saucepan over medium heat.
  • Add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
  • Cook the Bell Pepper and Tomatoes
  • Add the chopped bell pepper and tomatoes to the skillet. Stir and cook for another 3-4 minutes until the vegetables start to soften.
  • Add the Chicken and Broth
  • Stir in the shredded rotisserie chicken.
  • Pour in 1 cup of chicken broth (or vegetable broth for a lighter version). Stir everything together.
  • Simmer and Season
  • Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld together.
  • Season with salt, pepper, and any other spices you like (cumin, paprika, chili flakes, etc.).
  • Serve
  • Once the mixture is heated through and the flavors are well combined, serve hot.
