Prepare the Ingredients
Shred the rotisserie chicken using your hands or a fork. Set aside.
Dice the onion, garlic, bell pepper, and tomatoes.
Sauté the Vegetables
Heat 1 tablespoon of olive oil in a large skillet or saucepan over medium heat.
Add the chopped onion and garlic. Sauté for 2-3 minutes until softened and fragrant.
Cook the Bell Pepper and Tomatoes
Add the chopped bell pepper and tomatoes to the skillet. Stir and cook for another 3-4 minutes until the vegetables start to soften.
Add the Chicken and Broth
Stir in the shredded rotisserie chicken.
Pour in 1 cup of chicken broth (or vegetable broth for a lighter version). Stir everything together.
Simmer and Season
Bring the mixture to a simmer and let it cook for 5-7 minutes, allowing the flavors to meld together.
Season with salt, pepper, and any other spices you like (cumin, paprika, chili flakes, etc.).
Serve
Once the mixture is heated through and the flavors are well combined, serve hot.
Optional: Top with shredded cheese or a dollop of sour cream for added flavor and richness.
