Ingredients
  

  • 12 oz 340g penne rigate pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 can 14 oz crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes optional for heat
  • 1/2 cup heavy cream for a creamy version
  • 1 Salt and pepper to taste
  • 1 Fresh basil or parsley for garnish
  • 1 Grated Parmesan cheese optional, for serving

Instructions
 

  • Boil the Pasta: Bring a large pot of salted water to a boil. Cook the penne rigate according to the package instructions, usually about 10-12 minutes. Drain and set aside, reserving a cup of pasta water.
  • Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  • Add Tomatoes & Seasoning: Stir in the crushed tomatoes, oregano, chili flakes (if using), salt, and pepper. Simmer the sauce for 5-7 minutes to allow the flavors to meld.
  • Add Cream (optional): For a creamy sauce, stir in the heavy cream and let it simmer for another 3 minutes.
  • Combine Pasta and Sauce: Add the cooked pasta to the skillet with the sauce. Toss to coat, adding some reserved pasta water if needed to achieve the desired sauce consistency.
  • Serve: Garnish with fresh herbs and grated Parmesan cheese if desired. Serve immediately and enjoy!

  • Make it Vegan: Skip the heavy cream and Parmesan, or use dairy-free alternatives like coconut cream and vegan cheese.
