Colander for draining pasta
Wooden spoon or spatula for stirring
Measuring Cups and Spoons
- 12 oz 340g penne rigate pasta
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 can 14 oz crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes optional for heat
- 1/2 cup heavy cream for a creamy version
- 1 Salt and pepper to taste
- 1 Fresh basil or parsley for garnish
- 1 Grated Parmesan cheese optional, for serving
Boil the Pasta: Bring a large pot of salted water to a boil. Cook the penne rigate according to the package instructions, usually about 10-12 minutes. Drain and set aside, reserving a cup of pasta water.
Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Add Tomatoes & Seasoning: Stir in the crushed tomatoes, oregano, chili flakes (if using), salt, and pepper. Simmer the sauce for 5-7 minutes to allow the flavors to meld.
Add Cream (optional): For a creamy sauce, stir in the heavy cream and let it simmer for another 3 minutes.
Combine Pasta and Sauce: Add the cooked pasta to the skillet with the sauce. Toss to coat, adding some reserved pasta water if needed to achieve the desired sauce consistency.
Serve: Garnish with fresh herbs and grated Parmesan cheese if desired. Serve immediately and enjoy!
- Make it Vegan: Skip the heavy cream and Parmesan, or use dairy-free alternatives like coconut cream and vegan cheese.
- Flavor Boost: Add sautéed vegetables, such as mushrooms, spinach, or bell peppers, for extra nutrition and flavor.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
- Pro Tip: Don’t forget to reserve a bit of pasta cooking water; it helps the sauce cling to the pasta for a smoother texture.
